Oh so delish. It has been a while since I have felt so inclined to share a recipe...but today, I am just in the giving mood. Don't you just love when you have some I-am-on-the-verge of gagging brown bananas sitting on your counter? In this harsh economic time (you can use that excuse for ANYTHING now) it isn't prudent to be wasteful. SOOOOO, here comes the yummiest/healthy-er Banana Bread. (courtesy of allrecipes.com)
INGREDIENTS
(I took creative liberty and made some more healthful changes they are in bold)
1/4 cup white sugar
1 teaspoon ground cinnamon
3/4 cup butter (1/2 c butter 1/4 c applesauce)
3 cups white sugar (2 c brown sugar 1c white sugar)
3 eggs
6 very ripe bananas, mashed
1 (16 ounce) container sour cream (use fat free sour cream)
2 teaspoons vanilla extract
2 teaspoons ground cinnamon
1/2 teaspoon salt
3 teaspoons baking soda
4 1/2 cups all-purpose flour (2 1/2 c whole wheat flour, 2 c all purpose flour)
1 cup chopped walnuts (optional)
DIRECTIONS
1.Preheat oven to 300 degrees F (150 degrees C). Grease four 7x3 inch loaf pans. In a small bowl, stir together 1/4 cup white sugar and 1 teaspoon cinnamon. Dust pans lightly with cinnamon and sugar mixture. (this is a LOVELY little touch. So yummy!)
2. In a large bowl, cream butter and 3 cups sugar. Mix in eggs, mashed bananas, sour cream, vanilla and cinnamon. Mix in salt, baking soda and flour. Stir in nuts. Divide into prepared pans.
3.Bake for 1 hour, until a toothpick inserted in center comes out clean.

I am so going to make this with the bananas that are in my freezer! Except I may have to wait because I don't have any wheat flour. Thanks girl!
